My recipe for classic lace cookies is probably one of my favorite cookie recipes of all time – and for good reason! They’re easy to whip-up and are an absolute delight for your taste buds.

To create a bulkier cookie, I decided to bake a batch of Oatmeal Lace Cookies. I love that they have more substance, feeling a bit heavier (and thus, preventing me from inhaling twelve in one sitting).

How To Make Oatmeal Lace Cookies

Once baked, oatmeal lace cookies caramelize and spread evenly (and beautifully!). The oats add a delicious flavor, giving it a more sturdy texture – especially compared to a traditional lace cookie.

The Importance of Temperature

The temperature in baking is the absolute key. Baking is a science, and if you don’t follow certain procedures to a T, it can really affect your final product.

For my oatmeal lace cookies, you’ll want to melt your butter and brown sugar over medium heat. Then, you’ll add your flour, salt, and vanilla into the mix. Be sure to remove the skillet from the heat before adding the above-mentioned ingredients.

Next, you’ll want to cool down that mixture for about 10-15 minutes. You will not want it to be scalding hot. The next ingredient to add is the egg, and if it’s extremely hot, then you run the risk of cooking the egg (rather than having it mix smoothly into the cookie batter).

Ready to Bake

Once you’ve prepared the batter for your oatmeal lace cookies, it’s time to bake! Use a tablespoon to scoop up the correct amount of cookie batter. Twelve dollops of the batter should fit on a standard cookie sheet.

Be sure to flatten out the cookies slightly – then, let the oven do its thing! During its quick baking time (they only take about 8 minutes to bake!), they will spread and caramelize to their beautiful cookie form!

It is best to store these cookies in an airtight container at room temperature. They will stay fresh this way for about a week. You can keep them in your favorite cookie jar!

  • 1 stick butter approx. ½ cup
  • 1 cup brown sugar packed
  • 2 tbsp all-purpose flour
  • 1 tsp vanilla extract
  • ½ tsp salt
  • 1 large egg room temperature
  • 1 ½ cups rolled oats

Instructions

  • Preheat oven to 350 degrees F and line two cookie sheets with parchment paper and set aside.
  • Add butter and brown sugar in a medium-sized saucepan. Melt and mix both ingredients over medium heat.
  • Remove the saucepan from the heat and add flour, vanilla, and salt. Stir quickly, incorporating all ingredients – set aside to cool for about 15 minutes.
  • Working quickly, add eggs to batter and mix. You will want to make sure the batter is not scalding hot so that your egg doesn't cook once added. The egg should be blended/well-combined into the batter.
  • Add oats and fold carefully.
  • Use a tablespoon measuring spoon to drop dollops of the mixture onto lined baking sheets. 12 should fit on each sheet – be sure to keep them 1 ½ – 2 inches apart. Use the back of a spoon to spread out each mound slightly.
  • Bake in the oven for 8-10 minutes. Cool before serving.
