Gimme all the heart eyes with these emoji cookies.
I remember back when I was always on Blackberry Messenger. My friends and I were fascinated with the large selection of emoticons the app came with. In fact, I had a friend whose sole goal was to create messages that only consisted of emojis. Clearly, we had a lot of time on our hands.
Now, I’m going to really rewind it for you, so millennials: rejoice! Who remembers MSN messenger and using their emoticons? The moment my crush sent me a heart symbol, my actual heart went racing. At least, it was until my connection got interrupted because my sister decided to pick up the phone.
But in any case…
Happy World Emoji Day! To celebrate, I have made a batch of Emoji Cookies and I went for my favourite one: the sparkling heart! I think the sparkling heart doesn’t get enough credit. I mean, come on: a pink heart, sparkles… how can you go wrong?
Here’s how I made them:
How to Make Emoji Cookies – the Sparkling Heart
1 cup all-purpose flour + extra for rolling
Pinch of salt
¼ tsp baking powder
½ cup granulated sugar
½ tsp vanilla extract
½ stick butter, softened
1 large egg
Heart-shaped cookie cutter
2 cups pink candy melts
2 tsp coconut oil
4 oz yellow fondant
Cornstarch for shaping and rolling
Yields: 12-15 cookies
Sift together flour, salt, and baking powder.
Using a stand mixer or an electric mixer, beat together sugar, vanilla, butter, and egg. Add dry ingredients slowly and mix until cookie dough forms.
Wrap cookie dough in plastic wrap and refrigerate for one hour.
Once your hour is up, preheat your oven to 325 degrees and line a baking sheet with parchment paper.
Dust a clean working surface with flour and roll your cookie dough so that it’s about ¼ of an inch thick. Using your cookie cutter, cut out heart shapes and carefully place on lined baking sheet (about 1-2 inches apart).
Bake for about 10-15 minutes or until edges are golden. Allow to cool on a wire rack before decorating.
Create your “yellow sparkle” shapes. To do this, roll 12-15 fondant spheres, about ¼ of an inch in size. Roll another 12 spheres, this time, slightly bigger. Start molding them into diamond shapes. You may need to coat your fingers with cornstarch to avoid the fondant from sticking.
To decorate, place candy melts and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals or until completely melted. Stir to combine both ingredients.
Place wax paper on a clean working surface. Dip the frontside of each cookie into the bowl of melted candy and immediately place on wax paper.
Place your fondant shapes onto each cookie (exactly like the emoji) and allow to set, about 15-20 minutes. Enjoy and Happy World Emoji Day!
