In fact, my easy bruschetta appetizer also doubles as a light lunch. If you enjoy lighter meals, then this is perfect. This bruschetta recipe is our family’s go-to when we’re craving something quick but not-so-filling.

This is such an easy recipe that you can make it minutes before guests arrive. Here’s a bit more information about how I made them.

Ingredients

  • French baguette
  • Extra virgin olive oil
  • Garlic cloves, minced
  • Plum tomatoes, cut into small cubes
  • Finely shredded parmesan
  • Finely chopped basil
  • Salt
  • Ground black pepper
  • Balsamic vinegar reduction sauce (optional)

How Long Does Bruschetta Keep For?

I’m always one for leftovers. I’m not a big lunch eater, so I often turn to leftovers for a yummy healthy meal for my fam.

However, I must say, bruschetta is usually best eaten the day it’s made. Yup: the fresher, the better!

If you find yourself with tons of leftover bruschetta, I suggest keeping it refrigerated in an air-tight container for a maximum of two days.

How to Serve Bruschetta at a Party

When it comes to serving bruschetta, I recommend keeping it in a separate bowl, right next to your toasted baguette. It may be tempting to top each bread slice ahead of time, but avoid doing it! You want the bread to remain as crunchy as possible. Adding the bruschetta topping in advance just causes unnecessary sogginess.

Toast The Bruschetta

Preheat the oven and bake the sliced French bread for about 8 minutes. This will make them nice and crispy.

Saute The Garlic

Heat some olive oil in a small skillet and fry the garlic for 2 minutes. Allow to cool and pour contents into a large bowl. When you saute fresh garlic, your bruschetta will have a more powerful aroma and taste.

Drizzle Ingredients With Olive Oil

As the garlic cools down, add tomatoes, parmesan, basil salt, and pepper. Put in a serving bowl and drizzle with an extra tablespoon of olive oil.

If you don’t have olive oil, you can use avocado oil instead.

Add Balsamic Vinegar Reduction

When serving on individual bread slices, feel free to drizzle with balsamic vinegar reduction sauce.

Ingredients

  • 1 French baguette
  • ¼ cup extra virgin olive oil + 1 tbsp
  • 5 garlic cloves minced
  • 5 plum tomatoes cut into small cubes
  • ¼ cup finely shredded parmesan
  • ¼ cup finely chopped basil
  • 1 tsp salt
  • 1 tsp ground black pepper
  • Balsamic vinegar reduction sauce optional

Instructions

  • Preheat oven to 300 degrees.
  • Cut French bread into slices and line on a baking sheet. Bake for about 5-8 minutes or until crispy. Remove from oven and set aside.
  • Heat ¼ cup olive oil in a small skillet and fry garlic for 2 minutes. Allow to cool and pour contents into a large bowl.
  • As the garlic cools down, add tomatoes, parmesan, basil salt and pepper. Put in a serving bowl and drizzle with extra tablespoon of olive oil.
