Healthy Kid-Friendly Muffins

Lately, I’ve been very interested in recreating recipes from my childhood. Some of my earliest memories involve cooking/baking up a storm with my mom. These memories will always be with me – no matter what.

As a kiddo, I used to request Chocolate Chip Oatmeal Muffins on the regular. My mom and I would always whip-up something simple, often turning to a muffin mix because it was quick and easy (and I was always so impatiently hungry).

Today, I’m showing you how to make a homemade version of one of my favorite treats from my childhood. Completely made from scratch, I can’t wait to serve these to my very own family.

The Best Oats for Texture

Oats add such great texture to a muffin. I opted for rolled oats in these muffins but you can also use quick oats, if you’d like. I know many people love quick oats for muffins but rolled oats have worked perfectly fine for this recipe.

Add More Chocolate

This batch of muffins already include 2 full cups of milk chocolate chips. If you’ve got a huge sweet tooth, I recommend topping off the batter with more chocolate chips once scooped into the muffin tin.

How To Store Muffins

The best way to store homemade muffins is in an airtight container at room temperature – so on your countertop or in your pantry. They will stay fresh for up to 5 days, so I suggest eating them quickly!

Instructions

  • Preheat oven to 375 degrees F and line a muffin tin with muffin liners.
  • In a large bowl, mix together eggs, both sugars, vegetable oil and milk.
  • Add flour, rolled oats, baking powder, baking soda and salt and mix thoroughly until all ingredients form a nice muffin batter.
  • Fold chocolate chips into the batter.
  • Fill each section of the muffin tin with batter – bake for about 20 minutes or until a toothpick comes out clean. Cool for about 10 minutes, serve and enjoy.
