A Canada Day recipe to kick off your festivities… because who wouldn’t want a maple syrup buttercream topping first thing in the morning? Eh?
With Canada Day coming up, I was racking my brain trying to think of what to prepare. Being in a condo, we don’t have much of a backyard to host a BBQ so I thought: “What could be my alternative?”
Then, I had an epiphany: red velvet pancakes. The colour is just so fitting for our Canadian celebrations. I wanted to kick it up a notch so I opted to make an ultra-sweet maple syrup topping.
Cheers to the sweetest Canada Day recipe… ever.
Canada Day Recipe: Red Velvet Pancakes with Maple Syrup Buttercream
For the pancakes:
2 cups flour
2 tsp baking powder
Pinch of salt
1/4 cup cocoa
½ cup sugar
1 cup milk
2 tbsp vinegar
2 large eggs
1 tbsp oil
3/4 tsp red gel food coloring
Butter for the pan
Maple leaf cookie cutter (optional)
For the maple syrup topping:
4 oz. cream cheese, softened
3 tbsp confectioners’ sugar
2 tbsp whipping cream (35%)
1.5 tbsps 1% milk
1 tbsp maple syrup + extra for pouring
Directions:
In a medium-sized bowl, sift together flour, baking powder, and salt. Add cocoa and mix.
Add sugar, milk, vinegar, eggs, and oil and whisk until batter is completely smooth. Add gel food coloring and whisk until the batter is completely colored. Add more red if necessary.
Heat a buttered non-stick pan over medium heat. Pour about 1/3 cup’s worth of batter into the center of the pan and cook for about 2 minutes on each side.
Stack pancakes on a plate and set aside so that you can prepare the delicious maple cream cheese topping! (With your cookie cutter, you can cut out maple leaf pieces from one pancake to decorate your stack.)
For the topping, use a stand mixer or electric mixer to beat cream cheese, sugar, whipping cream, milk, and 1 tbsp of maple syrup. Once the ingredients are completely mixed with one another, pour generously over your stack of pancakes. If desired, pour more maple syrup on top.

This pancake looks heavenly! We normally have fried rice, an egg dish and smoked fish or chorizo for breakfast. Sometimes, it’s a sandwich but rarely a pancake. This is definitely a good addition to the menu we can have in the morning.
