And so the school year begins! We’ve been turning to overnight oats as our breakfast staple. Hurry up, the school bus is here!
I am always up for a quick morning solution. It’s not necessarily because I want to get the morning over with. In fact: on the contrary. It’s because I would much rather have at least 30 minutes to eat breakfast around the table with my family, than scramble to cook something and scarf it down in a rush.
I recognize that it’s now BTS for many families. While we like to think that our mornings will go over smoothly, sometimes our carefully-planned routines turn out for the worse. Okay, maybe not the worse, but something always has to happen, right?
The idea behind my Almond Overnight Oats is that the prepwork is all done the night before. This gives you a chance to a) sleep-in b) enjoy a hassle-free, healthy breakfast with the kiddos or, c) all of the above.
Almond Overnight Oats
- 2 cups steel-cut oats
- 2 cups almond milk
- 1 cup Greek yogurt
- Honey for drizzling
- Almonds for garnishing
- In a medium-sized bowl, combine oats, milk, and yogurt and mix together.
- Place in a air-tight container and let set overnight.
- Scoop into a glass or mason jar and top with honey and almonds.
