I can’t lie. For a while, salads didn’t get me going quite like a cheeseburger lunch would. I remember brown-bagging salads to work in hopes for a healthier meal, only to be disappointed once my noon hit.
As we ring in 2018, I know most of us are hoping to start on a new, health-conscious track. I don’t blame you. While I’m a strong believer in goal-getting all 365 days of a year, there’s nothing like a clean slate (ie.: a new year) to kick those goals in the butt.
So no, salads do not have to be bland, boring greenery, sitting dull in your plastic tupperware. Take a look at these five delicious salads that put a twist on veggies, grain, and other fun ingredients.
5 Delicious Salads for Your New Year’s Resolution
{one} I’m a sucker for a good, creamy potato salad. Of course, I know that this isn’t always ideal considering the amount of carbs in each bite. Luckily, Wholesome Yum came up with this fantastic alternative using cauliflower.
{two} I have always loved quinoa and this Thai Veggie Bowl is absolute perfection.
{three} For all of 2017, I had this obsession with brussel sprouts. Most of my family members didn’t agree to my liking but hey, they still ate it anyway. Here’s a caesar salad that uses brussel sprouts as a main ingredient.
{four} Looking to serve something a little more fancy? This Microgreen Baby Pea and Asparagus Salad makes for a mouthwatering starter.

I love potato salad, and I like your suggestion of using cauliflower instead. I’m going to have to experiment with that one! I also am loving the trend with fruits in salads lately. It just makes salads pop!
These salads look delicious. I go on and off salads. There are periods where I can’t get enough and others I can’t stand to eat them! These salads sound amazing so I’ll have to give them a try!
I think I would most like to try the Thai Veggie bowl. I am not a huge fan of mixing fruits and veggies, but it is definitely pretty and healthy! Nice to have some creative salad ideas for the New year.

While they all look so yummy, we are cutting dairy from our diet so unless I leave off the cheese or substitute, I won’t be able to try these.
