Lucky Oreo Medallions for St. Patrick’s Day

Oreos are delicious – but lucky (green) ones are even tastier.

For us, St. Patrick’s Day will be a little bit hectic this year. Joe’s grandfather is coming to visit all the way from Switzerland.¬†Life with a two-month old is crazy, so we’ve found ourselves running around making final arrangements for his stay.

Of course, I didn’t want to miss out on St. Patty’s festivities. I wanted to put together a quick treat, mainly for my nieces who would appreciate them the most. I envisioned something rainbow-themed and immediately thought of Fruity Pebbles. Just my luck, I couldn’t find them in any supermarket in my area.

So I opted for my favorite: Oreos.

A little bit of green and a sprinkling of rainbow? We may not be going all out for St. Patrick’s Day, but these treats are just what we need to feel lucky.

Lucky Oreo Medallions 

Ingredients
12 Oreo cookies
1 cup green candy melts
1 tsp coconut oil
Round rainbow sprinkles

Process
Line a cookie sheet with parchment paper and set aside. In 20 second intervals, microwave candy melts and coconut oil until completely melted.

Dip each cookie halfway in candy melts. Shake off excess and place carefully on lined cookie sheet. Top each cookie with rainbow sprinkles.

Let set in the refrigerator for a minimum of 10 minutes. Enjoy the luck!

  1. Wow! These lucky Oreo medallions look so tasty! I give you a 10 on the creativity scale! Doesn’t seem like they take long to make and I’m glad you used coconut oil in the recipe. That always makes for better food.

  2. I love Oreos! This would be a great desert to make for St. Patrick’s Day. I imagine this recipe would be great with the Mint Oreos also. I’ll try to make these for my granddaughter Emma and my grandson Zak

  3. I love this. I’m not the biggest fan of Oeros, but every once in a while I feel like I just have to have them. I have to have a glass of milk with them too. I bet the chocolate coating is a great taste!

  4. These look fantastic! I love Oreos, who doesn’t? I think this would be a fun way to celebrate St. Patricks Day at my home. We have always liked to have some green treats around the house this time of year and I think this would be perfect.

  5. What a fun and delicious treat to make and share with others. My little guy will enjoy helping me make these. If he doesn’t eat them all we will share with my daughter, too.

  6. Oh these are too cute. You can’t go wrong with Oreos. I love that you used Coconut Oil too. We will have to try these this weekend. Our family is big into sweets. Lol.
